ABOUT THE CHEF
Chef Gilles Le Gallès, former student of Bernard Loiseau and Gilbert Lecoze, has been chef/owner of several fine Parisian restaurants including La Barrière de Clichy (traditional French cuisine ), and l'Aristippe (specializing in fish) .
Originally from Vannes in Brittany, he decided to return to his native region in 2005 .
As chef of the restaurant of La Grée des Landes, he has taken on the challenge of creating a truly gourmet organic cuisine while opening new horizons for traditional French gastronomy .
